Is it possible to replace the light housing while using the existing electric cable?

You cannot use your existing light cable.  You will need to pull the new cord through the conduit on the new light.

What diameter is the lens?

Has a diameter of 7". That lens cover is for the Hayward Starlite, Duralite, and Astrolite.

how does this lens kit go onto the existing light on the pool? do i need to remove the housing or does this snap on somehow?

These will just snap in over the glass lens

Crystal, This will fit both the stainless steel and plastic version of the light.
